Until I board a plane to Corpus Christi and then drive to the most relaxing place on earth, Port Aransas, Texas! SO excited! The weather looks to be in the 60s and sunny all week and at this point I really can't argue with that. I'm extremely excited to eat mass quantities of fresh seafood. Not so excited about my "no sweets" lenten vow now that I remembered the AMAZING candy store there. Can't believe I'm going to miss out on my daily serving of candy made from chocolate, caramel and pecans. MAN that was good last year. I decided that we'll have to go there on the last day and get some to take home for an Easter Sunday treat. :)
Yesterday lunch didn't go as planned since my friend, Julie, asked me to lunch. I ate this:
Mediterranean Salad Wrap
A flour tortilla stuffed with fresh Spring Greens, Olives, Tomatoes, Red Bell Peppers, Red Onion, Feta Cheese, toasted Pine Nuts and our House Balsamic Vinaigrette.
It was VERY good, however next time I will order it without the onion and with the dressing on the side. It was a bit much dressing for me.
Today I had my normal breakfast sandwich and will be eating yesterday's lunch. My snack will be the same as it has been all week--when I find something that works for me I sure like to stick with it!
I'm hosting our girls' night supper club tonight and making stuffed green peppers. I don't really have a recipe to go by, but will most likely just figure something out as I go. I'm good like that.
My Devil Scale read 146.6 again today....not cool. I'm a little frustrated and just laying off now until I get back. I think I'm going to bring with my DVD with the intentions of using it but we'll see. Packing has not been fun, let me tell you. It just drives me mad that I can't seem to get the belly down at ALL. I told mom that the next holiday that she buys me a present for, she should buy me 5 or 10 sessions with the personal trainer at my gym. That would be fantastic.
